The Kitchen Manager is responsible for planning, organizing, and developing the overall day-to-day operation of the kitchen while also adhering to all state guidelines, regulations, as well as company policies and procedures.

The Kitchen Manager is accountable for consistent implementation of approved Standard Operating Procedures, while seeking out opportunities for improvement in compliance standards and overall efficiencies in the kitchen.

Primary responsibilities include ensuring that MIPs production is on schedule, products consistently meet state and internal quality requirements, and that target inventory levels are always maintained. The Kitchen Manager will be required to participate in regulatory inspections and other facilities-oriented needs, proactive “mock audits” and compliance checks.

Job Duties/Responsibilities: To perform this job successfully, an individual must be able to satisfactorily perform each of the essential duties/responsibilities listed below.   • Manage the Kitchen Staff and all MIPs production; ensuring all MIPs are labeled and stored appropriately
  • Oversee production by creating and reviewing production schedule; study and clarify specifications; calculate requirements; assemble and accurately weigh materials and supplies
  • Clean and maintain equipment and kitchen facility following current good manufacturing practices (cGMP) per standard operating procedures and compliance with CCB regulations.
  • Operate and adjust to various kitchen equipment, lab equipment and maintaining inventory records of supplies and materials.
  • Always ensuring readiness for regulatory inspections
  • Always ensuring compliance, including keeping inventory shrinkage to zero.
  • Accurately recording all cannabis edible inventory using METRC Tracking system.
  • Developing and executing Standard Operating Procedures (SOPs).
  • Maintain health and safety standards using data sheets; proper dispose of waste according to CCB guidelines.
  • Complete personnel training, goal setting and annual reviews.

Job Requirements/Preferred Experience:

  • Must be able to secure Nevada Agent Card Registration with the Nevada Cannabis Compliance Board
  • Must be 21 years of age or older
  • Minimum of 3-5 years of experience managing kitchen operations
  • Bachelor's Degree in Culinary Arts or equivalent experience preferred
  • Serv-Safe Food Manager Certification, or comparable or equivalent.
  • Excellent communication skills – responsible, punctual, meticulous, and reliable.
  • Ability to effectively prioritize and execute tasks while under pressure
  • Ability to work within a team and on an individual basis
  • Experience, knowledge, and familiarity with Cannabis – strains, genetics, and edible infusion
  • Coordinating with the Product Manager and Inventory Manager to ensure proper inventory levels and quality standards are always maintained
  • Ability to adjust formulations to precise dosing parameters.
  • Health and safety practices and precautions applicable to edible manufacturing (MIP).
  • Safe handling and proper disposal of food items, disposal of chemicals, and green waste.
  • Capabilities with METRC, Microsoft Dynamics ERP Systems, and basic Office applications.

Compliance:

  • Assure that operation adheres to all business and industry license requirements
  • Ensure processing operation is fully compliant with CCB regulations and company policies, as well as all food safety and sanitation procedures set forth by Southern Nevada Health District.
  • Maintain strict inventory records of all production documents, raw ingredients, finished goods, chemicals and equipment used in the kitchen.

Physical Requirements:

  • Requires the ability to sit and/or stand for prolonged periods.
  • Requires eye-hand coordination and manual dexterity sufficient to meet job and operate equipment.
  • Responsible for learning safety protocols for chemical handling and response for exposure to chemical spills.
  • Must be able to perform repetitive techniques accurately and consistently
  • Pushing/pulling/carrying, with the ability to lift up-to 100 pounds occasionally
  • Regular and on-time attendance (Hours may exceed 40 hours per week)
