Kitchen Manager- Chef

The kitchen manager's main responsibilities are to oversee production and post- production teams to ensure accurately prepared and packaged edibles with proper workflow of the product so that it is effective and efficient. As well as coordinating scheduling and communication with other departments. This position requires frequent travel to Snowflake, AZ production kitchen.

Responsibilities

Manage the day-to-day operations of staff assigned to the kitchen - Production of edibles, infusing of edibles, and packaging of finished edibles: Manage the process of production of edibles to ensure that it is done in an efficient and effective manner ensuring proper documentation of data for the product that is being produced. Manage process of infusing edible products to ensure accuracy of properly weighed distillate, ensuring that it is done in an efficient and effective manner, as well as proper documentation for the distillate being used. Manage responsibilities of packaging team to sure that it is done in an effective and efficient manner with accurate labels according to AZDHS compliance. Manage all administrative functions in the kitchen-making sure batch records, waste log, sublot forms, room logs and scale logs are completed daily.

Physical Requirements

-Requires prolonged sitting, standing, walking, bending, lifting, and use of hands. -Frequently requires physical exertion to manually move, lift, carry, pull, or push heavy objects or materials. -Frequently stooping, bending, and reaching. -Must work indoors and outdoors year-round. -Must work in noisy and crowded environments. -Observe, see, hear and respond to directions given with effective outcome -Lift 25-40 pounds from the floor to a waist-high table when necessary. -Crouch & bend often; -Stand for short/ high periods of time. -Sit for short/ medium periods of time. -Walk for short/high periods of time -Occasionally sit on the floor or at floor level. -Handle the responsibilities and routine stress often associated with this position;

Working Environment

Set weekly production schedule based on previous months orders; data to be given by kitchen manager. Ensure weekly ingredient ordering through vendors including Sysco and Amazon. Ensure all shipments are received arriving to the farm for GTC and verify any invoices as needed Controlling cost of goods and kitchen labor Help research and develop any new products Coordinate packaging and dishwashing assistance as needed for production by working with other department managers to secure assistance Ensure weekly ingredient inventory counts are completed, ensuring par levels set by the kitchen manager are maintained. Ensure monthly packaging inventory counts are completed, ensuring par levels set by the kitchen manager are maintained Work with lab team to coordinate new distillate batches according to the distillate specification guidelines. Work with maintenance team to resolve any kitchen equipment issues related to the scales, induction burners, convection oven, candy slicer and any production related equipment as well as leaks and temperature issues. Confirm product is packaged and accurately labeled for weekly drops to the distribution center as communicated by the kitchen manager and coordinate drop with the inventory team. Ensure lab sampling is completed according to the procedure standards set by the kitchen manager and QA, per AZDHS guidelines. Assist with hiring and interviewing when needed. Coordinate monthly safety trainings Ensure daily cleaning including trash removal, sweeping, mopping and sanitizing of all surfaces and kitchen equipment. Approve timesheets bi-weekly. Ensure all policies and procedures are being followed according to Copperstate guidelines. Work well and effectively with fellow co-workers in a productive way that is conducive to a professional work environment. Other duties assigned
